Experimenting with Daiya
Hello folks!
This past weekend I finally bit the bullet and bought vegan cheese. I tend to avoid buying processed vegan foods, however I figured I'd see what all the fuss was about. The fuss is justified!
The Real Canadian Superstore in my town only carried the mozzarella shreds, unfortunately, but I threw caution to the wind and made nachos anyway.
I chopped half an onion, half a red pepper and half a green pepper and added them to a skillet with a bit of olive oil.
Then I added some shakes of Tex Mex seasoning, put a lid on and cooked on medium heat for about 10 mins until the onions were translucent.
I spread out some blue corn tortilla chips on a plate, some Daiya ontop of that, and the onion and pepper mixture ontop of that once it was finished. I then nuked the plate in the microwave for 1 min on high and we were in nacho business!
I ate the nachos with some guacamole and salsa on the side. You could also add some lettuce, olives or vegan sour cream if you preferred.
